The holy grail of knives has always been the search for a way to get the hardest steel blade edge as possible, without the inherent brittleness associated with hard steel. I.O.Shen have found an elegant solution to this problem by using a layer of this hardest HRC62 steel, sandwiched between two softer layers which provide a protective shock absorbing element to the blade while the harder steel forms the cutting edge of the blade. Their knives as a result have a razor sharp, 15° Japanese profile and hold their edges for longer than traditional knives. The most visually distinctive element of the I.O.Shen knives are their stunningly beautiful handles, weighted like a European knife for comfort of use, and featuring their stunning Tai Tang pattern. This pattern is not just an embellishment, it is part of the single piece of metal that forms the tang of the knife.
